Some time ago my mother and i made some delicious things from elderflowers: syrup, jelly and icepops.

We went outside to collect elderflowers in the afternoon. It was a rainy day back in may, but it was beautiful.

Sirup

First we made the jelly.

Ingredients:

  • 5 big elderflower umbels
  • 1 litre orange juice
  • 500g gelling sugar

Carefully wash the elderflowers, fill a bowl with the orange juice and put the umbels in. Let them soak in the juice over night.
Pass everything through a sieve. Fill a pot with the elderflower-orange juice and add the gelling sugar. Boil it up and when it’s jellied fill in jam jars.

Elderflower-syrup:
Ingredients:

  • 10-15 elderflower umbels
  • 1 litre water
  • 1 kg sugar
  • 15g citric acid

Wash the elderflowers and fill a bowl with the water and out the elderflowers in it. Let them soak in the water over night.
Pass everything through a sieve and fill it in a pot together with the sugar and the citric acid. Boil it up and then leave to cool a little. The syrup still has to be hot when filled in bottles.

icepop

The ice pops are very simple.
Ingredients:

  • Orange juice
  • Elderflower syrup
  • Ice pop molds

There is no real recipe for this. I just mixed orange juice with elderflower syrup until i liked the taste (you don’t need that much of the syrup as it is really sweet!) and the filled it in the molds and put them in the freezer for a couple of hours.
